Alotta kids put their numbers on their helmet (stickers). I was thinking about painting mine so that I could get a little creative. Is there any paint I can use that will be easy to rub off incase my number changes?

I would just go with stickers, paint seems kind of risky. If you really want to paint it you can use almost any kind of paint. If you want it off just use some paint thinner. Paint thinner can be found cheap in any hardware store.

Paint voids your warrenty I believe (if you use permanent), plus it would look terrible. Any paint that rubs off would be bad to use anyway because one shaft hits it and it would smear.

I have a degree in fine arts, so I know a thing or two about paint. If you get yourself some latex paint at an art store, a brand like BASIC or GALERIA, you should be able to rub it off. They also sell various sized tubes of it so you don't have to buy a ton. I wouldn't apply paint thinner to your helmet, that may weaken the shell.
