After a penalty is assessed, the offending player takes a knee in the penalty box in front of the table.
Is there a rule that keeps the coach out of the penalty box talking to the player? I know this is a convention, but is there a rule we can identify?

Go to a rule book and look at the diagram of the field. The is a specific place for coaches, it is the "Coaches Area". That is where coaches belong, not in the "Special Substitution Area" or the "Scorers Table Area".

It's a conduct foul for a coach to be in the penalty area except for getting information from the timer/scorer or for exchanging a stick with a player on the opposite side of the field.

I assume it is Rule 6, Section 6, Article 1, "shall not enter the field of play" whereby the field of play includes the penalty box.
Also, Article 3 - b.
Correct?

I was focusing on NCAA 7-b, NFHS 6-3-b more than the "shall not enter the field of play" part:
A player, coach, athletic trainer or other person officially connected with
a team shall not:
b. Leave the bench area and/or coaches area on his or her side of the field.
Players must be within the confines of the bench area while the clock is
running and the ball is in play, except when reporting to the table area
for special substitution or for serving penalty time. A coach or player
may leave the bench/coaches area while play is suspended and enter the
table area for the sole and distinct purpose of seeking information from
the timekeeper, or scorer.
Elsewhere it says a crosse exchange may take place at the table area as well.
