The only time it usually is not called ,is if it's an attackman chasing down a D-man for that last ditch effort before he crosses the mid-field line.

This isn't always true. My past season was at the MS level and we used one handed wraps all the time.

I think their legal because around restraning line I wrap checked this not so great defender, picked up the ball and passed it to a player cutting... he scored. The kid was like,"Was that legal?" the ref just shrugged his shoulders.

I think different leagues have different rules. Check with your league before the season to see. Also, check with the refs before every game because there are some refs that will play the way they know, and may not be up to date with the newest rule changes. In my league it is not allowed, but some people still do it and get away with it, espescially, as lax45 said, attackman chasing down d-poles. It also helps if you get only the stick and if you are much smaller than the guy you're doing it against. Just stay in control.

i use one handed over the shoulder checks a lot and it doesnt get called unless i have some gay ref who thinks i hit the kid in the head. as long as were not helicopter checking anyone it doesnt get called

You are allowed to check one handed, but you can't use the free hand to hold him back in any way.

You can one hand check. It has to be under control. As soon as you wind all the way back they will call it. They will also call it if you drop your stick while doing it
