Seems the demand for quality boys high school play is so high that the high schools can't accommodate the numbers of kids. I have heard that some girls don't even play for their schools electing to play club only.

You don't know what you're talking about HdG. My son has signed up and will be taught by high caliber coaches and play a strong varsity schedule.
This program is more to train/develop the large number of kids who their high schools have discarded because of too many numbers that would dominate in any other program outside of the MIAA. Most of these kids have played since they were 5 yrs old an now are told that they're done.

What does their schedule look like? Do they play other club teams?

Well if the kids couldn't make their own Varsity squad (no offense to anyone whos has signed up for this), how hard do you think the schedule is going to be? I would say a mid to a bit higher HS Varisty schedule. And kids don't get cut on numbers alone but skill too. Coaches aren't like, "Oh, well we can only take 25 kids so let's take the first 25 that signed up." This might be helpful for frosh or sophs, because of the coaching (if the coaches they say will be there all the time are), but I don't think it would do much for anything older.
