I have two young players on my team that will hold the stick lefty to catch and then switch sides to throw righty. I am working on this with them, but does anyone have any tricks/tips to help correct this?

simply make them learn not to do it and get out of the habit.
help them practice catching right, and throwing left. Once they have that, they will have 2 hands they can use
and tell them that when they are playing around or whatever, and during practice, jsut work on one hand. Tell them they are not allowed to switch everytime, unless its like a scimage and the situation comes up that they need to switch,

I had the same problem in high school. Coming from hockey, where I was a lefty, my hand eye coordination was much better lefty for catching. Meanwhile, in everything else I'm right handed ('cept baseball, I can switch hit...go figure) and was better throwing righty than left.
It's just going to take time. I managed to figure out a way to catch and throw with both hands but lefty throws and righty catches were ugly and had poor form. So basically what I did was focus on how to catch and throw the same way with both hands. After I got the mechanics down it took a lot of wall ball doing double catching right and throwing left what I did for the reverse.
Unfortunately there's no neat trick or magic word to make it just happen. It's going to take time. If you have the resources, I'd say take the 2 of them aside in practice and go over the mechanics necessary and have them learn how to do it the proper way. You can also inform them that they should be catching right and throwing lefty whenever the drill/play doesn't require a specific hand/side.

I had the same problem, mine just automatically went away as i got used to my stick.

Wallball on their own time - focusing on using only left hand, then right hand.
