I'm watching a tape of the 2003 Hopkins - Syracuse game. The refs let a lot of slashing go that I would want to call. The offensive player is getting whacked hard on the chicken wing and on the shoulder pad away from the ball.

Don't use that as your model for officiating high school or even lower-level college games. The NCAA officials let them get away with a lot, especially in the championship game, because they "don't want to decide the game." They're also very concerned about the way the coaches evaluate them, since that influences playoff assignments.
One of my favorite lines ever about sports officiating:
Hockey announcer 1: They're really letting them play.
Hockey announcer 2: Well, they're letting one team play. The other team is getting the crap beaten out of them.
Personally, I think you can end up deciding the game by not calling things that should be called fouls.

exactly, also at the highest level the players can control their checks in ways that the younger kids cant. the younger kids are much more likely to accidentally hurt someone, and you should call the game accordingly.
by the time a player gets to the NCAA semis, they know exactly how they want to hurt an opponent :)

NCAA is a totally different level of play than high school.

I've been wondering about that...the NCAA games I've seen this year are very loosely called compared to the USL MDIA ones I've coached in.
I don't follow the argument that since the NCAA players know what they're doing, they shouldn't be controlled as tightly as the high schoolers...seems to me like the NCAA'ers should know better...

In the Hopkins - Syracuse game, there are also a lot of possessions pushes in the back as the ball carrier moves past the net. Sometimes the push in the back comes in the form of a cross check. I have to say I would want to call that.

Yea but its NCAA, little pushes and bumping and hits are all allowed! Watch a high school basketball game and then go to college, college will have more rough play. Same idea.

Is this a sort of unwritten rule or precident? Also, could one of you guys email my refs about it? :)

I just know that higher competition is called a looser.
