when you get into a fight and the other person takes off their helmet, should you do the same? or let them punch your helmet while you punch them in the face?

If they take off their helmet and you actually plan to fight them you should take off yours too. Otherwise there's two things that happen.
1. "He won, but it was only because he was scared to take his helmet off."
2. "Wow, he lost even though he wouldn't take off his helmet."

If we're going by Marquess of Queensberry Rules, then you have to take your helmet off.

If were going, no-holds-barred, win at any cost rules, then you obviously keep your helmet on.

Make a note though, if you do take your helmet off you are accepting the challenge to fight. If you keep your helmet on and keep your stick, you're basically walking away.

He was playing defense when his man caught the ball, the defender freaking tanked the attackman. After the clear while the refs were on the other side of the field the attackman wailed on the defender with his stick across the back of the legs. A guy on my box team 3 years ago got in a fight and ripped the other guy's helmet off and hit him in the face with it. Got suspended for the rest of the season...it was kinda funny though.
